Sweet and Savoury Sausage Curry (Printable Version)

# What You'll Need:

01 - 8 pork sausages (or chicken/vegetarian sausages)

# Directions:

01 - Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add the sausages and brown on all sides for approximately 8 minutes. Remove from pan and set aside.
02 - Add remaining oil to the pan. Sauté sliced onion for 3 minutes until softened. Add minced garlic, sliced carrot, and bell pepper. Cook for 4 minutes, stirring frequently.
03 - Stir in curry powder, ground cumin, ground coriander, and chili flakes. Fry for 1 minute until fragrant, being careful not to burn the spices.
04 - Add diced green apple to the pan and cook for 2 minutes until slightly softened.
05 - Pour in chopped tomatoes, ketchup, mango chutney, and stock. Stir well to combine all ingredients and dissolve chutney into the liquid.
06 - Return browned sausages to the pan. Bring to a simmer, cover, and cook gently for 20 minutes over low heat.
07 - Remove lid and simmer uncovered for another 5 minutes to allow the sauce to reduce and thicken slightly.
08 - Taste and adjust seasoning with salt and pepper if needed. Stir in yogurt or cream just before serving if desired for a creamier texture.
09 - Serve hot alongside steamed rice or warm naan bread.
