High Protein Peanut Butter Yogurt Bites (Printable Version)

Protein-packed frozen treats blending creamy Greek yogurt with rich peanut butter, topped with chocolate chips or coconut for a healthy dessert.

# What You'll Need:

→ Yogurt Mixture

01 - 1½ cups plain Greek yogurt, nonfat or 2%
02 - ½ cup natural peanut butter, smooth or crunchy
03 - 3 tablespoons honey or maple syrup
04 - 1 teaspoon vanilla extract

→ Toppings

05 - 2 tablespoons mini chocolate chips
06 - 2 tablespoons chopped roasted peanuts
07 - 1 tablespoon unsweetened coconut flakes

# Directions:

01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is completely smooth and well blended.
03 - Spoon the mixture evenly into the prepared molds, filling each cavity about three-quarters full.
04 - Sprinkle your desired toppings over each filled mold, gently pressing them into the surface so they adhere.
05 - Place the tin or molds in the freezer and freeze for at least 2 hours, or until the bites are completely firm.
06 - Remove the frozen bites from the molds and transfer to an airtight container. Store in the freezer and enjoy straight from frozen.

# Expert Hints:

01 -
  • They taste like peanut butter cup filling but pack real protein and take almost zero effort to pull together.
  • No baking, no cooking, and no fancy equipment, which means you can make these at midnight in your pajamas and still feel accomplished.
02 -
  • Let the bites sit at room temperature for two to three minutes before eating because straight from the freezer they are tooth achingly hard and you miss the creamy texture.
  • Do not skip the liners or spray, because I did once and spent twenty minutes scraping frozen yogurt out of a muffin tin with a butter knife while questioning my choices.
03 -
  • Warm your peanut butter slightly in the microwave for fifteen seconds before mixing so it blends into the yogurt without aggressive stirring and deflating the mixture.
  • Freeze the tray on a flat surface, because even a slight tilt in your freezer will give you lopsided bites that look more like tiny hats than perfect circles.
