Tender lobster with creamy herbed filling in warm garlic-buttered toasted rolls

# What You'll Need:

→ Lobster Filling

01 - 14 oz cooked lobster meat, chopped
02 - 3 tbsp mayonnaise
03 - 2 tbsp crème fraîche or sour cream
04 - 1 tbsp fresh lemon juice
05 - 1 tsp Dijon mustard
06 - 2 tbsp finely chopped celery
07 - 2 tbsp finely chopped chives
08 - 1 tbsp finely chopped fresh dill
09 - Salt and freshly ground black pepper, to taste

→ Garlic Butter

10 - 4 tbsp unsalted butter
11 - 2 garlic cloves, finely minced
12 - 1 tbsp finely chopped fresh parsley
13 - Pinch of salt

→ For Serving

14 - 4 top-split brioche or hot dog rolls
15 - Lemon wedges

# Directions:

01 - Combine lobster meat, mayonnaise, crème fraîche, lemon juice, Dijon mustard, celery, chives, and dill in a mixing bowl. Season generously with salt and pepper. Gently fold until lobster is evenly coated. Refrigerate while preparing rolls.
02 - Melt butter in small saucepan over low heat. Add minced garlic and cook, stirring constantly, for 1–2 minutes until fragrant and pale golden—do not brown. Remove from heat immediately and stir in parsley with a pinch of salt.
03 - Preheat skillet or griddle to medium heat. Brush outsides of each roll generously with prepared garlic butter. Place rolls buttered-side down and toast for 1–2 minutes per side until golden brown and crisped. Reserve remaining garlic butter for serving.
04 - Pack toasted rolls generously with chilled lobster mixture, mounding slightly above roll edges. Drizzle tops with reserved garlic butter. Serve immediately alongside lemon wedges for squeezing.

# Expert Hints:

01 -
  • The creamy filling strikes that perfect balance between rich and refreshing, so every bite feels luxurious without being heavy
  • Garlic butter on the rolls transforms them from good to absolutely unforgettable, creating this incredible crispy aromatic exterior
02 -
  • The filling must be cold when you stuff the rolls, otherwise the lobster will cook slightly and lose that gorgeous sweet tender texture we're after
  • Don't skip toasting the rolls in garlic butter, because that contrast between the hot buttery exterior and cool creamy filling is what makes this recipe transcendental
03 -
  • If you're feeling extravagant, fold in a tiny bit of lump crab meat with the lobster for incredible depth of flavor
  • The garlic butter can be made ahead and stored in the fridge, just gently rewarm it before brushing the rolls
