Quick 15-minute no-bake bites made with dates, oats, and almonds. Naturally sweet, chewy, and perfect for healthy snacking on the go.

# What You'll Need:

→ Base

01 - 1 cup pitted Medjool dates (about 180 g)
02 - 1 cup rolled oats, certified gluten-free if needed (about 100 g)
03 - 1/2 cup raw almonds (about 60 g)
04 - 1/4 cup unsweetened shredded coconut (about 30 g)

→ Flavor & Binding

05 - 2 tbsp natural peanut butter or almond butter
06 - 1 tbsp chia seeds (optional)
07 - 1/2 tsp pure vanilla extract
08 - 1/4 tsp sea salt

→ Optional Mix-Ins

09 - 2 tbsp mini dark chocolate chips
10 - 2 tbsp cacao nibs
11 - 2 tbsp chopped dried cranberries

# Directions:

01 - If the dates feel dry or firm, soak them in hot water for 5 minutes, then drain thoroughly to remove excess moisture.
02 - Add the raw almonds and rolled oats to a food processor. Pulse until both are finely chopped and evenly textured.
03 - Add the drained dates, shredded coconut, peanut butter, chia seeds, vanilla extract, and sea salt to the food processor. Blend continuously until the mixture becomes sticky and holds together when pressed between your fingers.
04 - If using chocolate chips, cacao nibs, or dried cranberries, pulse them into the mixture 2 to 3 times until just evenly distributed without over-processing.
05 - Scoop approximately 1 tablespoon of the mixture at a time and roll firmly between your palms to form a smooth ball. Repeat with the remaining mixture to yield 12 balls.
06 - Place the energy balls in an airtight container and refrigerate for up to 1 week. For longer storage, freeze them for up to 3 months.

# Expert Hints:

01 -
  • No oven, no stove, no waiting, just a food processor and your hands.
  • They taste like cookie dough but you can eat them for breakfast without anyone judging you.
  • The recipe forgives almost every substitution, so use whatever nuts and seeds you have hiding in your pantry.
02 -
  • If the mixture crumbles and will not hold together, add another date or a small spoonful of peanut butter and process again.
  • Wet hands slightly before rolling to prevent the sticky mixture from adhering to your palms like glue.
  • These freeze beautifully for up to three months, so always make a double batch because they disappear fast.
03 -
  • Medjool dates vary wildly in softness, so always buy more than you need and pick the squishiest ones for this recipe.
  • Let the rolled balls sit in the fridge uncovered for the first hour so the outside firms up before you seal the container, otherwise they get soggy.
