# What You'll Need:

→ Beans & Legumes

01 - 1 can (15 oz) black beans, drained and rinsed
02 - 1 can (15 oz) black-eyed peas, drained and rinsed

→ Vegetables

03 - 1 cup fresh or frozen corn, thawed if frozen
04 - 1 cup grape tomatoes, quartered
05 - 1 red bell pepper, diced
06 - 1 green bell pepper, diced
07 - 1/2 red onion, finely diced
08 - 1 jalapeño, seeded and minced
09 - 1/4 cup fresh cilantro, chopped

→ Dressing

10 - 1/4 cup olive oil
11 - 3 tablespoons red wine vinegar
12 - 1 tablespoon fresh lime juice (about 1 lime)
13 - 1 teaspoon honey or agave syrup
14 - 1/2 teaspoon ground cumin
15 - 1/2 teaspoon chili powder
16 - Salt and black pepper, to taste

# Directions:

01 - In a large mixing bowl, combine the drained black beans, black-eyed peas, corn, quartered grape tomatoes, diced red and green bell peppers, finely diced red onion, minced jalapeño, and chopped cilantro.
02 - In a small bowl or mason jar, whisk together the olive oil, red wine vinegar, fresh lime juice, honey or agave syrup, ground cumin, chili powder, salt, and black pepper until the dressing is well emulsified.
03 - Pour the dressing over the bean and vegetable mixture. Toss gently until all ingredients are evenly coated.
04 - Cover the bowl and refrigerate for at least 20 minutes before serving to allow the flavors to meld together.
05 - Serve chilled as a salad, a dip with tortilla chips, or as a vibrant side dish.

# Expert Hints:

01 -
  • It requires zero cooking so your kitchen stays cool and you stay sane during hot months.
  • The dressing pulls double duty as a marinade for grilled chicken or roasted vegetables if you have leftovers.
02 -
  • Do not skip the resting time because the flavors are flat and harsh right after mixing and only mellow into something cohesive after a chill.
  • Add diced avocado right before serving rather than during mixing because it will brown and turn mushy if it sits in the acid too long.
03 -
  • Pat the rinsed beans dry with a clean towel before adding them so the dressing does not get watered down by residual can liquid.
  • Squeeze the lime half directly over the bowl and then drop it into the container while the caviar chills for extra fragrance.
