01 - In a medium bowl or jar, combine rolled oats, coconut milk, yogurt, shredded coconut, chia seeds, maple syrup, vanilla extract, and a pinch of salt. Stir until all ingredients are fully incorporated.
02 - Cover the bowl or seal the jar tightly and refrigerate for a minimum of 6 to 8 hours, allowing the oats to absorb liquid and soften while the flavors meld together.
03 - The following morning, stir the oats thoroughly. If the consistency is too thick, add an extra splash of coconut milk and stir until reaching the desired texture.
04 - Divide the oats between two serving bowls or jars. Top each portion with toasted coconut flakes, crushed graham crackers, and fresh banana slices or pineapple chunks if desired. Serve chilled.
