# Directions:

01 - Heat grill or grill pan to medium-high temperature.
02 - Combine chicken cubes with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper in a bowl. Toss until evenly coated.
03 - Thread seasoned chicken, red bell pepper pieces, and red onion wedges onto skewers, alternating ingredients evenly.
04 - Brush skewers with half of the BBQ sauce, ensuring even coverage.
05 - Grill for 12-15 minutes, turning periodically. Brush with remaining BBQ sauce during the final 5 minutes of cooking. Chicken should reach internal temperature of 165°F and develop light charring.
06 - Arrange mixed greens, cherry tomatoes, cucumber, avocado, radishes, and sweetcorn on individual plates or large serving platter.
07 - Whisk mayonnaise, Greek yogurt, chives, parsley, dill, garlic, lemon juice, salt, and pepper until smooth. Adjust consistency with milk as desired.
08 - Place grilled chicken skewers atop prepared salad. Drizzle with herby ranch dressing or serve on the side for individual portioning.

# Expert Hints:

01 -
  • The combination of warm, smoky BBQ chicken against cool, crisp vegetables creates that perfect temperature contrast that makes every bite exciting
  • You get all the satisfaction of grilled food without the heaviness that usually comes with BBQ meals
02 -
  • Dont brush on the BBQ sauce too early, the sugar in it will burn before the chicken cooks through
  • Let the chicken rest for just a couple minutes after grilling so the juices redistribute
03 -
  • Serve the dressing on the side so leftover salad stays crisp
  • Use metal skewers if you have them, they conduct heat and help cook the vegetables from the inside
